But here I have used the traditional way of making kuzhi paniyaram. This kuzhi paniyaram can be made as spicy or in sweeter version. Paniyaram is a very popular snack in the south india, however it is called with different names in different south indian states as Paddu, Ponganalu. It can be prepared with the Idli Dosa batter itself.

Steps to make Spicy paniyaram / Kaara paniyaram:
  1. Heat oil in a pan and then add mustard, urad dal and cumin.
  2. Add the onion, green chilli, Curry leaves and coriander leaves and saute well.
  3. Then add the coconut flakes and stir well.
  4. Now add the Pepper Cumin powder, hing and salt and saute well. If salt is already added in Idli flour. So only less salt can be added.
  5. Add the ​​mixture with idli flour and stir well.
  6. Heat a little oil in a paniyaram pan.
  7. Then pour in the paniyaram dough and bake until both sides are golden.
  8. Tasty spicy paniyaram is ready.

However instead of idli rice you can use raw rice for crispier paniyaram. It goes well with any spicy chutney. It's perfect as a breakfast or pairs wonderfully with a cup of tea, as an evening snack. First grind red chillies(you can soak the red chillies along rice too) ,salt and asafoetida,then add the soaked rice, grind until fine rawa/sooji consistency and lastly the dals.
