Tastes great when served with a cup of hot tea and green chutney. there are many ways and variants of simple khaman dhokla recipe, but this recipe is dedicated to instant version. basically, the traditional dhokla recipe is made with grounding the soaked channa dal which is later allowed to ferment overnight. fermentation step can be time-consuming and requires a lot of planning and preparation in advance. to mitigate this, there are several instant version which is achieved by artificially fermenting. in this recipe, i have used eno fruit salt which helps.

The ingredients needed to make Instant khaman/Besan dhokla:
- Get 1 cup gram flour (Besan)
- Take 1/2 tsp Baking soda
- Make ready 4 tsp Sugar
- Make ready 1/2 tsp Tatri/nimbu ke phool/citric acid

- Prepare 4 tsp Oil
- Take 1 tsp Mustard seeds
- Get 2 tsp white Sesame seeds

- Take 3-4 Green chilies
The knife should come out almost clean. This instant Dhokla is made using besan (Gram flour) and we are going to use eno salt / baking soda as the rising agent to make these dhoklas soft and spongy! Remove the dhokla from the tin on to a plate by gently tapping on the top of the tin. Then cut into small pieces as you like.
Instructions to make Instant khaman/Besan dhokla:
- First grease a thali or plate using little oil. Bring 1 glass water to a boil in the steamer/dhokla maker. While it is getting ready prepare the batter.
- Take dry ingredients (besan, salt, sugar (2 tsp) citric acid) in a bowl. mix properly.
- Now make lump free batter adding required lukewarm water. (batter should be just like Idli batter)
- Now Heat 2 tsp oil in a fry pan. Add baking soda in batter and immediately pour hot oil. Stir it. It will start bubble up. Be quick.
- Pour this batter in preheated greased thali. Cover the lid. Steam it on first 5 minute on high flame. Then 10 minutes on medium flame.
- Check with knife. If it sticks to knife steam again for few minutes. Switch off gas. Remove thali from steamer. Let it cool down. Cut in to square pieces.
- Now for tempering heat oil in a pan. Add mustard seeds. It splutter add sesame seeds, 5-6 tsp water, sugar 2 tsp, green chillies. Let it boil.
- Now pour this tampering evenly on to Fluffy khaman.
- Serve with Kadhi or chutney.
Gently pour the tadka on to dhokla so that it covers fully. Afterwards, allow it to soak the syrup for a few minutes. Enjoy tasty and soft Khaman Dhokla with mint and tamarind chutney. Technically dhokla and khaman are different. Dhokla is made from a fermented batter of ground rice and chana dal.
