- Cut the mizuna into 6 cm long pieces.
- Cut the tofu into 1.5 cm thick slices, drain off the water very well, and dust both sides of each slice with flour.
- Heat up some oil in a frying pan, and put in the tofu from Step 2. When both sides of the tofu slices are golden brown and crispy, take out of the pan.
- Put the ground meat in the frying pan from Step 3, and saute until browned.
- Add the flavoring ingredients - sugar, sake, soy sauce and doubanjiang - and mix.
- Add the mizuna and saute until limp, then add the katakuriko slurry, stirring until the sauce has thickened.
- Arrange the tofu from Step 3 on a plate, and pour over the sauce from Step 6, and it's done.
