The ingredients needed to make Thai Green Curry:
  1. Prepare For green Curry paste-
  2. Prepare 2 tbsp lemongrass (if you don't have lemongrass,use lemon juice)
  3. Take 2 tbsp galangal chopped
  4. Prepare 3 kaffir lime leaves
  5. Get 4 garlic cloves
  6. Get 3 tbsp thai shallots(or green onion)
  7. Take 1/2 cup thai sweet basil
  8. Take 1/2 cup coriander leaves
  9. Make ready 2-3 green chillies
  10. Get other Other ingredients:-
  11. Get 1 cup tofu cut into cubes
  12. Prepare 1 cup eggplant
  13. Prepare 1/2 cup vegetable of your choice
  14. Take 1 cup bamboo shoots
  15. Make ready 2 tsp brown sugar
  16. Prepare As needed coconut milk
  17. Make ready 2 tsp soy sauce
  18. Make ready 1/2 cup green beans trimmed
  19. Take As needed oil
  20. Take 4 Kaffir lime leaves
  21. Prepare 2 cup vegetable stock
  22. Prepare To taste salt
  23. Prepare as required Cashews to garnish
  24. Make ready as required Red chilli for garnish
  25. Get as required Basil leaves for garnish

The curry is green in color, spicy, aromatic, sweet and savory at the same time. Thai green curry is so delicious, specially when served with steaming white jasmine rice. There's a common misconception that Thai green curry is green in color from all the Thai basil used in the recipe. While there is often Thai sweet basil tossed into the curry, the real green color of the curry comes from Thai green chilies that are the main ingredient of the Thai green curry paste used to make the curry.

Steps to make Thai Green Curry:
  1. Place all 'Green Curry Paste' ingredients in a food processor or blender, and add 1/3 glass coconut milk or enough to blend, blend it and make smooth paste.
  2. Heat a wok or deep frying pan over medium-high heat. Drizzle in oil and add2 tbsp green curry paste. Stir-fry until fragrant (about 2 minutes).Add stock plus lime leaves or bay leaves. When sauce comes to a gentle boil, reduce heat to medium-low or just until you get a nice simmer. Add all vegetables, Simmer 7-10 mins, or until all vegetable soft enough to pierce with a fork.
  3. Pour soy sauce, and add the whole kaffir lime leaves and sugar, stir well.
  4. Add tofu and bamboo shoots, stir and cook for 5 minutes. Then stir in green beans and bean shoots, cook for a further 2 minutes. Taste and adjust seasoning to suit your taste.
  5. Serve with jasmine rice or plain rice.

Return chicken to the skillet, stirring to coat with the curry mixture. The "sweet" in the Thai name (wan means 'sweet') refers to the particular color green itself and not to the taste of the curry. As this is a Thai curry based on coconut milk and fresh green chillies, the color comes out creamy mild green or, as this color is called in Thai, "sweet green". Its ingredients are not exactly fixed. Heat oil in large saucepan over medium heat.
