  1. Take 250 gm Turai
  2. Prepare 1 Tomatoes
  3. Take 1 Onions
  4. Take Corriender
  5. Take 3 Green chilli
  6. Take Curry leave
  7. Make ready 1 Kairi
  8. Make ready 1 tbsp Bhuna masala
  9. Prepare Red chilli flakeshalftsp
  10. Take Salt as required
  11. Make ready Oil as required
  12. Make ready 1 tbsp Cumin

Once the seeds crackle, add in the ginger, tomatoes, turmeric powder, chilli powder, coriander powder and salt to taste. This curry is called Turai ki subzi (Tori, Turiya) in North India, Beerakaya Curry in some parts of South India. This exact same method can be used to make a curry with Sponge Gourd, called Gilki ki Subji in Hindi or with Zucchini, also called Courgette. Turai is part of the cucumber family it is also called a Loffa in scientific language.

Steps to make Turai ke sabzi:
  1. At first pour oil in a pan then add curry leave and cumin then chopped onions
  2. When it becomes golden brown add chopped Turrai, green chillies,kairi and tomatoes
  3. Then add all spices and salt and cover until tenderize then broil and serve with corriender garnish

There is a lot of names of this vegetable Turai Ki Sabzi (Turiya) in North India and Beerakaya Curry in South India, Gilki Ki Sabzi in Hindi. It is a popular vegetable in India, Vietnam, and China. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura. Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts.
