The batter made out of rice flour, wheat flour, jaggery & ripe banana puree, flavoured with few pinches of cardamoms is poured into a mould called "Appe Pan" in which ghee is heated & fried until deep brown.   1. Dissolve jaggery in half cup slightly hot water. Set aside.
  2. Mash the bananas very well in a bowl. Filter the jaggery to the mashed banana.
  3. Add coconut, ghee, cardamom, sooji and flour. Mix well using more water as needed to make a batter of thick pouring consistency. (refer the picture). Do not add too much water. The batter must be free from lumps.
  4. Grease paniyaram pan with ghee and add ghee in each of the moulds. When the ghee turns hot, pour batter with a tbsp to fill 3/4 of the mould.
  5. When the base sets and turns lightly golden to brown, flip them with a skewer or wooden spoon.
  6. Cook until the other side too cooks and the edges turn golden. I used karuppatti so it shows little brown in colour. Make sweet paniyaram or sweet appam in batches. Serve hot or cold.

My mom make this sweet often the whole kitchen just smells wonderfully. Banana gives a soft and spongy texture to the appams. You can even add jaggery as such but I wanted to strain the impurities so made syrup and then added. First powder the jaggery and mix all the ingredients wheat flour, rice flour, mashed banana, cooking soda, cardamom and salt with water. The consistency should be thick like vada batter.
