  1. Make ready 2 cucumber
  2. Take 1/2 cup moong dhal
  3. Get 1 tsp cumin seeds
  4. Make ready 1 tsp sambar powder
  5. Get 1 tsp mustard seeds
  6. Take 1 tsp urad dhal
  7. Get 1/4 tsp turmeric powder
  8. Prepare 2 tsp oil

Once it is popping up, add onion,crushed chili and curry leaves & pandan leaf. Sauté for few seconds until onions are tender & releasing good fragrance. Cucumber tomato curry is great on the side with chapatis and a sprinkling of Bikaneri bhujia on top. I make this curry generally with English cucumber - less seeds, and I leave its thin green skin on.

Steps to make Cucumber Curry:
  1. Peel and slice cucumber. Add turmeric and cucumber to dhal and pressure cook for 2whistle
  2. Heat a pan. Add oil,mustard and urad dhal.
  3. Once it sputters add cumin seeds and cooked dhal.
  4. Add sambar powder and salt to taste. cook well till the raw smell of powder goes off.
  5. Garnish with coriander leaves

You can, if you like, substitute it with Indian cucumber*. In a bowl, combine first seven ingredients. Toss with cucumbers and onion slices. Add one cup of water, cucumber, salt and cumin powder. Turn off the flame, cucumber curry is ready to serve.
