Instructions to make Turai ki sabji:
- Take a pressure cooker heat the oil add cumin and mustard seeds. allow them to crackel after that add tomato and onion puree and sute it.
- Now add the all regular spices, red chilli powder,salt, water and turai and cook it.
Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji. This curry is called Turai ki subzi (Tori, Turiya) in North India, Beerakaya Curry in some parts of South India. This exact same method can be used to make a curry with Sponge Gourd, called Gilki ki Subji in Hindi or with Zucchini, also called Courgette.
