Turai Ki Sabzi is a ridge gourd curry. It is a wonderful curry made with ridge gourd which is called as 'turai' in hindi and this is a simple veg curry. Turai Ki Sabzi is a North Indian recipe for stir-fried Chinese okra.
Turai ki Sabji is one of the most favored of current trending meals in the world. It is easy, it’s quick, it tastes yummy. It’s enjoyed by millions daily. They’re nice and they look wonderful. Turai ki Sabji is something that I have loved my entire life.
To get started with this particular recipe, we must prepare a few ingredients. You can have turai ki sabji using 6 ingredients and 8 steps. Here is how you cook that.
The ingredients needed to make Turai ki Sabji:
- Prepare 500 gram Taroi
- Prepare 3 Green chilli chopped
- Take 1/4 tbsp Celery
- Make ready 1 tbsp Mustard oil
- Take to taste Salt
- Get as required Coriander leaf for garnish
The ridge gourd or turai is cooked in the tomato-based gravy to make this amazing dish. This is rich and flavourful curry. Most of the people don't like to eat Turai or ridge gourd. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura.
Instructions to make Turai ki Sabji:
- Wash the turai well and dry them
- Peel the taroi and cut it into round thin shapes.
- Put oil in the pan and heat it
- Allow the celery to crack in the oil.and add green chilli and fry
- Add the taroi and salt, mix well and keep it covered for 10 minutes to cook.
- Now open it and check that our taroi is cooked.
- Now take out the turai in a vessel, it is ready to eat and can be enjoyed now.

Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji. Peel off the skin of the ridge gourd and chop into small pieces. Puree the tomato and keep aside.
