Brown the ground beef and drain. Meanwhile, prepare enchilada sauce or empty can of sauce into a saucepan and heat over medium heat. Add ground beef to the tortilla. Roll the tortilla, and place seam side down in an ovenproof dish.

Steps to make Beef Encheritos:
  1. Onion chopped fine, ground beef, garlic salt pepper, cumin,coriander in a fry pan till almost done .remove from heat.
  2. Chop cilantro, and thin shave bell peppers chop fine black olives.
  3. Get sauce into the pan as it heats up add the molasses
  4. Dip the tortillas into the sauce 1 by 1 stacking them till ready to use.
  5. Take each individual tortilla add a bit of ground beef,black olives, and Jack cheese roll up. Till pan is filled.
  6. Pour remaining sauce on top of enchilada then add leftover olives and shaved red bell pepper cook at 300 for 22 min.

Cover the enchiritos with sauce, cheese, and chopped onions. Add slices of black olives if desired. The Enchirito is a cross between an enchilada and a burrito. Basically, a burrito with enchilada sauce and cheese melted over it. I make this one with ground beef but you can just as easily substitute shredded chicken or beef or some chopped steak or fajita meat.
