Traditionally, Nei Appam is made with rice and requires little planning ahead like soaking the rice and grinding. Unniyappam/Unniappam is a variation (instant version) of Nei appam in which mashed plantain is added to the batter. Unni in malayalam means small, Nei means ghee/clarified butter and Appam means a small rice cake.

  1. Take 3 cups Idli / Dosa fermented batter
  2. Prepare 1/2 cup Onions

  5. Take 1/2 cup bean
  6. Take 1/2 cup coriander leaves
  7. Prepare 1/4 cup capsicum

  11. Make ready as needed Oil few drops (optional)

Add in two very ripe bananas. Unniyappam is a small round snack made from rice, jaggery, banana, roasted coconut pieces, roasted sesame seeds and cardamom powder fried in oil. It is Kerala's version of Sweet Kuzhi Paniyaram. In Malayalam, 'unni' means small and 'appam' means rice cake.

Steps to make Veggie Unniappam / Paniyaram:
  1. In the batter add in all the vegetables that are finely chopped and give a good mix.
  2. I have taken Iron cast pan with a nonstick coating. Take few drops of oil and with the help of a brush apply inside each molds. This way you can avoid oil why cooking the Appams.
  3. Heat the pan and spoon in the batter upto 3/4th of the mold. Cover the pan and let it cook on low-medium flame for a minute. The top of the appam will bulge out, check if it is cooked. With a help of a fork turn the appams to the opposite direction i.e. the bulge side will turn to the base. Allow it to cook for few more seconds.
  4. This should be served hot and fresh, else it will lose the crispness. It’s best served with onion -tomato chutney.
