In large nonstick skillet, cook ground beef, onions and garlic until beef is thoroughly cooked, stirring frequently. Add green chiles, salt and pepper; mix well. Seasoning each layer lightly with salt and pepper, layer the thinly sliced potatoes, celery, ground beef, onions, bell pepper, and diced tomatoes in the baking dish.

Instructions to make Layered Beef & Zucchini:

  2. Grease 8x8x2 baking dish.

Sprinkle with remaining salt and pepper and top with bell pepper rings. Heat a large skillet over medium-high heat. In large skillet, brown ground beef over medium-high heat until thoroughly cooked, stirring occasionally; drain. Stir in taco seasoning and water. Sprinkle beef on top of cheese.
