- Press sauté and start/stop. Brown the chicken with marinade and 4 tablespoons of water. Press start/stop when the chicken is slightly colored.
- Close the lit and make sure the pressure is closed. Press poultry. Press start/stop.
- Once cookings is finished release pressure. Take the chicken out of the pot and thicken the sauce in sauté function.
- Serve with noodles, sugarsnaps, lettuce or pickled cucumber. Garnish with coriander and spring onions.
Put in as many chicken thighs as can be covered with sauce. I like to quickly crisp up the chicken under the broiler before serving. Lemongrass Chicken is divine just with a hot side of rice, zoodles or cauliflower rice and some stir fried or fresh veggies. It would also be delicious in a wrap, or on top of a salad.
