- In a small pressure cooker heat oil. Add mustard seeds, cumin seeds and carrom seeds. When crackles add asafoetida. Add chopped tomato and saute for sometimes.
- Add approximate 1 cup water. Add salt, turmeric powder, red chilli powder, dhania jeera powder and jaggery. Mix well. When water comes to boil add cubed potatoes and brinjals.
- Close the lid and cook until 4-5 whistles. Cool down for sometime. Release pressure and open cooker. Transfer sabji into bowl. Add chopped coriander leaves. Serve with bhakhri or paratha. You can serve with Khichdi also.
