- Add your filling to the toasted side of one slice of bread. Some thin-sliced Swiss first…

- …then some pickled red onion. If you want to add ketchup, BBQ sauce etc., do it now. Ill be serving mine on the side. Season, and add some more cheese. The Emmental cheese I'm using is not very salty, so I'm taking that into account
- Now put the lid on toasted side down. Press down, and put in a preheated sandwich toaster for about 6-7 minutes. Check to see if it's browned nicely, if not, give it a couple of minutes extra
- Before plating, cut and trim any unpleasant bits from your sandwich. I find scissors are the best tool for this
Spread a thin layer of mayonnaise on one side of each piece and place mayonnaise-side down in the cracker mixture. Spread a thin layer of mayonnaise on the other side of the chicken and cover with the cracker mixture, patting firmly into the chicken. Place chicken breasts on the prepared baking dish.
