The ingredients needed to make Kuzhi paniyaram/ sweet paniyaram:
  1. Make ready 1 cup Raw rice/ paccharisi
  2. Get 1 cup Parboiled rice/ idli rice
  3. Take 1/4 cup Urad dhal/ulutham paruppu
  4. Get 1/2 tsp Fenugreek/ venthayam
  5. Get as required Ghee or sesame oil
  6. Make ready 1 cup Jaggery / vellam
  7. Get 2 Cardamom/ Elakkai
  8. Prepare 1/2 tsp Dry ginger powder/ sukku
  9. Prepare 1/2 tsp Grated coconut - optional

Kuzhi paniyarams can be made sweet or spicy. It is a favorite among kids. You can give them as snacks when they return from school. A popular chettinad kuzhi paniyaram recipe made the authentic way.

Instructions to make Kuzhi paniyaram/ sweet paniyaram:
  1. Wash rice,urad dhal and fenugreek and soak them for 2-3 hours. - Strain the water and grind it to fine batter like idly/ dosa batter. - Add little salt and keep the batter for fermentation for at least 4-5 hours. - After 5 hours the batter is ready to cook.
  2. Jaggery syrub: In a pan add 1 cup of jaggery 1/2 cup of water,cardamoms and 1/2 tsp of dry ginger powder. Heat the pan to dissolve jaggery. There is no specific syrub consistency needed for paniyaram. When the jaggery is completely dissolve, strain the mixture to remove impurities.Now add required amount of jaggery syrup into the batter. Check the batter taste and add syrup for more sweetness.
  3. Grease the kuzhi paniyaram pan with ghee and pour the batter. Cover the pan with a lid and let it cook for sometime.
  4. When the base is cooked well, flip them and cook until golden and cooked inside.
  5. Maintain a constant temperature throughout the process is very important.

This paniyaram turns out so fluffy and taste delicious with chutney or sambar. I have already shared paniyaram recipe but this is a authentic recipe for the chettinad kuzhi paniyaram handed down to me by my perimma. She made it once brought home, it was delicious. Sweet appam or Sweet paniyaram is a crisp, soft and porous dumpling made with leftover idli batter. At the moment you are going to make, add powdered jaggery, cardamom, salt, cooking soda and coconut gratings (if desired) and mix well.
