Take the leftover dosa batter in a wide bowl. Temper mustard, urad dal, chana dal and hing. After dals turn golden, saute the finely chopped onion, green chilli, ginger, curry leaves, coriander leaves and little salt. Using idli batter too we can get crispy out and soft in paniyaram.
Steps to make Paniyaram/Guntaponganalu (Using leftover idly/dosa batter):
- In a bowl take idli/dosa batter, add rice flour and mix well.
- Add chopped onions, cumin, greenchillies, hing, coriander and curry leaves.
- Heat a paniyaram chatti, pour few drops of oil in each mould. Later, add the batter in each mould using a spoon or small ladle.
- Close it with a lid and let it cook for few mins.
- Remove the lid and turn on to the other side using a wooden stick or spoon.
- Cook till crisp and transfer the paniyarams to a casserole or bowl.
- Serve with chutney or sambar.
Either you can use non-stick appe pan or iron appe pan. It is important to use sour batter. Paniyaram or paddu is the natural successor of idli in my house. The first day we have soft soft idlis and the next morning, without fail we make paniyarams. Paniyaram can be a handy recipe when we want to use the leftover idli-dosa batter to use or when the batter starts to become sour.
