Steps to make Olya Kajuchi usal (Tender cashews curry):
  1. Firstly tender cashews soak in hot water for 1 hr.
  2. Remove the skin of the cashews and wash them throghly rubing with your hands under running water.
  3. Grind garlic cloves, ginger, grated coconut, green chilli & coriander leaves together to a smooth paste.
  4. Heat 2 tbsp of oil in a pan, add chopped onion & saute until turns trasculent.
  5. Add ground paste & saute until you will get aroma, then add chopped tomatoes, turmeric powder, red chilli powder, malwani masala & saute for few second.
  6. Add cashews and sauté well till it coats the cashews.
  7. Add water to get it's consistency, and cover the pan with lid & simmer until the cashwes turn soft but not mushy.
  8. Remove the lid add salt, kokam, jaggery & mix well. Now cashew curry is ready to eat.
  9. Enjoy hot cashew curry with chapati or bhakri
