To begin with this recipe, we have to first prepare a few ingredients. You can have sev usal (easy way) using 16 ingredients and 11 steps. Here is how you can achieve that.

The ingredients needed to make SEV USAL (easy way):
  1. Take 2 medium sized onions
  2. Take 2 small tomatoes or 1 big
  3. Take 3-4 garlic cloves
  4. Prepare 2 Green chillies
  5. Take 1/2 inch Ginger
  6. Make ready 1 tsp Mustard seed
  7. Prepare 2 Bay leaves
  8. Take 4 tbsp Oil
  9. Make ready 1 cup White Pre soaked and pressure cooked white dried peas
  10. Prepare 1 tsp Lemon juice
  11. Make ready As needed Besan slurry
  12. Get As needed Water
  13. Make ready As needed Sev as per choice spicy or plain
  14. Get As needed Finely chop onions to garnish
  15. Get As needed Coriander leaves and lemon wedges to garnish
  16. Make ready As needed Pav sauted in butter

The procedure of making sev usal is divided into two steps. First is making the ragda and second is assembling it. For making ragda, we have taken soaked white peas over night and cooked them in pressure cooker. Sev Usal, yet another spicy and tempting Indian snack made with ragda, is a must try Indian chaat if you like a taste of healthy ragda.

Instructions to make SEV USAL (easy way):
  1. First of all pressure cook soaked white peas with salt for 1 whistle and keep aside
  2. Secondly prepare besan slurry by adding 2 tbsp besan and 3 tbsp water.(keep aside)
  3. Now lets grind the indgridients to make usal.
  4. Grind in smooth paste like this
  5. In cooker add oil,mustard seeds,bay leaves.
  6. Add paste prepared and cook till oil is separated from sides on slow flame.
  7. Now add salt to taste, red chilli powder 1 tsp, turmeric powder 1 tsp,coriander powder 1 tsp and sev usal masala 1 tsp.(if u don't have sev usal masala add garam masala same quantity and 2 lavings at this stage)
  8. Stir till aroma releases then add white peas.
  9. Add water now.
  10. Let this usal boil,once it starts boiling add besan slurry.
  11. Cook this mixture till it thickens like curry (approx 10 mins on slow flame)And serve by adding lime juice,sev,and finely chopped onions and pav.

One can make best sev usal at home by just topping up ragda with boiled potatoes, grated carrot, chopped onions and lots of sev. Sev (fried chickpea flour sticks) - can be found in any Indian Store. Turn on InstantPot to SAUTE mode. Open the lid to see that some of the peas will have lost their skin-this will let you know they are cooked. You are now ready to serve the Sev Usal.
