  1. Sift dry ingredients together
  2. Grate margarine over the flour-mixture. Then use fingertips to rub the margarine into the mixture.
  3. Mix lemon juice and ice water together. Sprinkle over the flour mixture, then mix with a fork.
  4. Lightly press the dough together and place/wrap in a plastic bag. Put in fridge to cool.
  5. Once the dough is nice and cold, roll it to a thickness of about 2mm on a floured surface.
  6. Take pieces of the dough and press it into the form of a quich base (flat bottom, sides coming up) inside a greased muffin pan. Do not stretch the dough out. Then prick the bottom of the quich bases with a fork. Bake at a temp of 200ºC for 8-10 min.
  7. Let the bases cool.
  8. Once cooled, fill with favourite filling. Suggestion: mushrooms, cheese, bacon, spinach and egg, which is quick and easy to prepare in a pan while the bases cool. Or try a sweet option, eg. jam, chocolate mousse, meringue or thick custard.

Serve them for a brunch buffet or a simple appetizer. These delicious mini quiches are a time-saving party dish because they can be made in advance and then simply reheated before serving.
