  2. Take 1 kg Mutton
  3. Get 7 Onions
  4. Make ready 6 Garlic

  8. Get 1 Tomato
  9. Take 1 Lemon
  10. Take 1/2 cup Yoghurt

  14. Take 1 tbsp Garam Masala
  15. Prepare 1/4 tsp Turmeric Powder
  16. Prepare 4 tbsp Ghee (Cow)
  17. Make ready 1/2 cup Coconut Milk
  18. Take Coconut Oil
  19. Take Salt
  20. Get Flour (for dum)
  21. Take Rice
  22. Take 750 grams Basmati Rice
  23. Get 1 tsp Fennel
  24. Make ready 50 grams Raisins
  25. Take 100 grams Cashew Nut
  26. Take 3 piece Cinnamon
  27. Get 6 piece Cloves
  28. Make ready 2 Star Anise
  29. Get 100 grams Sliced Pineapple
  30. Get 2 Bay Leaves
Instructions to make Mutton Dum Biryani:
  1. Slice onions & crush garlic, small shallots, green chillies & ginger. Mix it with coriander leaves, mint leaves, pandan leaves, tomato, turmeric, garam masala, lemon juice, half cup coconut oil, ghee & salt. Cook the mix.
  2. Add Mutton into the mix along with half cup of yoghurt. Cook & make sure the gravy is thick.
  3. Fry sliced onions, raisins & cashews in ghee separately.
  4. Cook the rice (75%) with salt, bay leaves, fennel, cinnamon, clove, cardamom & star anise.
  5. Spread ghee on the base of a bigger cooking vessel. Place half the gravy. Then add half the rice on top of it evenly (till you can't see the gravy). Add coriander & mint leaves along with the sliced pineapples, fried onions, cashews & raisins on the rice.
  6. Add remaining curry as next layer & then the rice on top of that (repeating the above procedure). Drizzle some ghee over the rice. Drizzle some coconut milk. Seal the lid on top of the vessel with flour dough. Put on low flame till Masala settles.
