Today, I made Cilantro Lime Meatballs, which is a Hispanic take on an Italian favorite. Add beef, onions, almond flour, tomato paste, egg, cilantro and seasonings to bowl.
Steps to make Cilantro meatballs:
- In a large bowl mix in all the ingredients except the egg, onion and oil. Allow to rest for atleast 30 minutes for the flavours to blend together
- Now, mix in the grated onion and egg to the mince mixture and form meatballs
- In an oven proof dish arrange the meatballs ready to grill
- Lightly brush the meatballs with the vegetable oil and grill in a preheated oven at 180 degrees (Celsius) for 15 minutes, then flip and grill for another 15 minutes.
- Once meatballs are grilled and cooked through, remove from heat and allow to rest before serving. Serve warm with the sour cream mint sauce (see recipe in my recipe list)
One pan cilantro chicken meatballs simmered in a creamy sweet mango coconut sauce! Serve with rice, quinoa, cauliflower rice or over noodles! Fold in cilantro and green onions. Roll into desired sized meatballs and place onto baking sheet. Serve immediately OR allow to cool and freeze for later.
