- Get 1 cup besan
- Make ready 1/2 cup Dahi (curd)
- Prepare 2 tbsp Lahsun (garlic)

- Take as needed Oil for cooking

Gatte ki sabzi, an authentic dish from Rajasthani cuisine is a delicious curry prepared with gram flour as base ingredient. Gatte means cooked gram flour dumplings, which are added to the spicy curd gravy to make this irresistible curry. It tastes best when served with roti or any delicious Indian flat bread, dal and plain rice in lunch. Gatte Ki Sabji or gatta curry is a Rajasthani specialty made of gram flour (besan).
Steps to make Gatta sabji:
- In a vessel take besan and add oil 2 tbsp, ajwain, salt and red chilli and knead a dough using water (aroumd 1/4th cup)
- Roll into long strips and cut into pieces
- Take lahsun, coriander and red chilli and grind into a paste
- Boil gatta in water or deep fry them
- Mix the lahsun masala in dahi
- In a kadhai heat oil and add the dahi mixture and cook on low flame for 4-5 mins
- Now add gatta and water (in which gatta is boiled) and bring it to a boil amd simmer for 5-10 mins and serve hot with bajra roti or normal roti
Rajasthani food is usually spicy, so this dish comes as a relief. It contains gram flour dumplings in a yogurt-based curry, which mellows down the pungency of the chillies. Gatta curry can also be made in tomato and onion based curry. Combine the beaten curds, gram flour, ½ cup of water and curry leaves and mix well so that no lumps remain. Heat the oil in a pan, add the cumin seeds, mustard seeds, fennel seeds, asafoetida, bay leaf, clove, cinnamon and cardamom.
