  6. Whisk the eggs gently and pour them where the hot oil is and fry like as if you're making an omelet.
  7. Just as the omelet is done, tear it up with a spoon or chop stick. Once the egg has cooked completely, stir and flip it together with the fried rice.
  8. Fry for 1-2 minutes and plate them. You can add scalions and chinese parsley with lime wedges.

But the secret is generously salting the sliced tomatoes before cooking—it concentrates all that. Add the rice and stir well. Push the rice to the side of the pan and add a bit more oil. Crack an egg on the oil and mix in the pan. When solid, flip the rice on top and mix well.
