This is a traditional Pad Thai recipe used by a friend's mother. You can use chicken, pork, beef, tofu, or a combination. You may want to start with less pepper, and work your way up.

The ingredients needed to make Phad Thai:
  1. Make ready 300 grams Chicken thigh, into strips
  2. Get 180 grams Rice noodle, cooked
  3. Prepare 3/4 cup Spring onion, sliced diagonally
  4. Get 100 grams Bean sprouts
  5. Make ready 1/3 cup Rough chopped peanuts, toasted
  6. Get 1/3 cup Sweet chilli sauce
  7. Make ready 1 tbsp Fish suace
  8. Get 1 1/2 tbsp Lemon juice
  9. Get Zest of 1/2 a lemon
  10. Take 1 tbsp Tamarind purée
  11. Get 2 tbsp Peanut butter
  12. Get 1 tbsp Chopped chilli
  13. Prepare 2 Eggs, whisked
  14. Get 1/2 cup Mint, chopped
  15. Prepare Peanut oil for cooking
  16. Make ready to taste Salt and pepper

It's made with thin, flat rice noodles, and almost always has bean sprouts, garlic chives, scrambled egg, firm tofu and a protein - the most popular being chicken or prawns/shrimp. Instructions to make Phad Thai:
  1. Throw chilli sauce, tamerind purée, lemon juice and rind, peanut butter and fish sauce into a jar and shake well to combine.
  2. Fry chicken and chilli in wok until lightly browned on high heat.
  3. Add eggs and stir constantly until well scrambled in with chicken.
  4. Lower temp and add sauce, cook for a couple of minutes stirring well.
  5. Throw in noodles, sprouts,mint, spring onions and toasted peanuts- (set aside some onion and mint to garnish)mix well and heat through.
  6. Serve with a slice of lemon- garnish with some mint, spring onion and if you're really brave, some sliced chilli. Yuuuuum!! Serves around 4. Really really good- Enjoy!
