I'm making this on Valentine's Day - its one of my hubby's. Pour the sugar and six tablespoons of water into a clean stainless steel pan. Dissolve the sugar slowly, stirring with a wooden spoon over a low heat. In a large heavy saucepan, combine sugar, corn syrup and remaining butter; bring to a boil over medium heat, stirring constantly.

- Get a bowl and put the sugar syrup, pour the milk onto the syrup, cover the bowl with foil paper. Set water in a pot and cover put the bowl and allow for 10-15 mins

Pour the milk into a small pan, cut the vanilla pod in half and scrape the seeds into the pan. Add the pod and bring to a simmer, then turn off the heat, cover and leave to infuse while you make. Cream Caramel is a strain unlike any other. To turn out each caramel, run the point of a sharp knife around the top edge of each ramekin, place a dessert plate on top and invert. Give the ramekin and plate a sharp shake and carefully remove the ramekin.
