Dalma is a traditional dish of Orissa. It is a kind of dal which contains nutritious vegetables like papaya, brinjal and some others. If you do not know how to cook, then venturing out with Dalma would be great.

To get started with this particular recipe, we have to prepare a few ingredients. You can cook dalma using 10 ingredients and 8 steps. Here is how you can achieve that.
The ingredients needed to make Dalma:
- Prepare 1 small bowl Toor Dal
- Get 1 handful roasted moong Dal or plain chana Dal (optional)
- Get as needed Vegetables like potato,brinjal, pumpkin,beans,turai,arbi or suran just 2-3cubes of each vegetables
- Prepare 1/2 tsp Turmeric powder,
- Get 1 chilli,
- Get to taste salt,
- Prepare 1/4 tsp Hing,
- Take 1 dry chilli
- Make ready 1/2 tsp roasted jeera powder,
- Take as needed Grated coconut
It can be made using toor (arhar) dal, and an assortment of vegetables typically raw banana, eggplant, green papaya and pumpkins, simmered in a special spice blend. But why dalma was chosen, and why this combination? The answer to this, according to nutritional anthropologists, "is in the paleo diet that our ancestors were following. Contrary to the popular belief, new research showcases that humans were cooking and consuming starchy plants, especially root vegetables that were similar to today's yam.
Instructions to make Dalma:
- In a pressure cooker add water and bring it boil then add washed and soaked Dal with all diced vegetables.
- Add salt and termeric powder then close it's lid and pressure cook it till 2-3 whistle.
- Turn off it and prepare a baghar for it.In a pan put ghee or oil then add Hing a little for aroma and then panchporan(mustard,jeera,methi dana,saunf,kala jeera) if you don't have then use only mustard and jeera for tadka along with Lal mirch.
- When tadka splutter then add a cup of water to it slowly and add other ingredients like chilli and roasted jeera(cumin) powder.
- Open cooker and put this bhaghar on to it.Add grated coconut on to it.
- It's ready to serve. Best taste with steam rice or parantha or Puri.It's a wholesome meal.
