Turai Ki Sabzi is a ridge gourd curry. It is a wonderful curry made with ridge gourd which is called as 'turai' in hindi and this is a simple veg curry. Turai Ki Sabzi is a North Indian recipe for stir-fried Chinese okra.

The ingredients needed to make Turai ki sabji:
  1. Take 500 gm Ridged gourd
  2. Get 1 onion chopped
  3. Get 1 tomato chopped
  4. Get 3-4 green chilli
  5. Make ready 1 1/2 tbsp oil
  6. Get 1 tsp Cumin seed
  7. Get 1/2 tsp turmeric powder
  8. Make ready 1/2 tsp red chilli powder
  9. Take 1/2 tsp garam masala
  10. Get Salt as per taste
  11. Take 1 tbsp chopped coriander leaves

The ridge gourd or turai is cooked in the tomato-based gravy to make this amazing dish. This is rich and flavourful curry. Most of the people don't like to eat Turai or ridge gourd. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura.

Instructions to make Turai ki sabji:
  1. Chopped the ridged gourd
  2. Heat the oil in a pan add cumin seed after crackle of cumin seed add chopped onion and green chillies saute till golden brown then add chopped tomato and ridged gourd saute for 2 min
  3. Then add red chilli powder, turmeric powder,salt and garam masala mix well
  4. Cover with lid in medium flame check it between after 2-3 mins for 12-15 min
  5. Check it out ridged gourd soft and cook properly
  6. After cook properly then garnish with coriander leaves
  7. Serve with roti and paratha

Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji. This curry is called Turai ki subzi (Tori, Turiya) in North India, Beerakaya Curry in some parts of South India. This exact same method can be used to make a curry with Sponge Gourd, called Gilki ki Subji in Hindi or with Zucchini, also called Courgette.
