  13. Get 1 tbsp lime juice
  14. Get As needed coriander leaves, sliced lime and chopped onion to garnish

Fry the onion in the oil till brown. Mix all the ingredients together and add to the pot and stir till the tomato has become soft and the water has dried. Add the meat and cook again to let the water dry. Turai Ki Sabzi is a ridge gourd curry.

Instructions to make Turai Ka Salan:
  1. Heat oil in a pan and temper with cumin seeds and slit chilies. Saute for a few seconds. Then add the onion and fry till they turn slightly brown in colour.
  2. Add the ginger-garlic paste, tomato paste & all the dry spices mixed with a little water. Saute till oil separates.
  3. Add the turai and mix well to combine. Fry for 2 minutes.
  4. Add 3/4 cup water. Cover and simmer on a low flame till dry and the turai is soft.
  5. When done, add lime juice and serve, garnished with lime, chopped onion & coriander leaves.

It is a wonderful curry made with ridge gourd which is called as 'turai' in hindi and this is a simple veg curry. It tastes really well and goes well with rice and rotis/chapathis as well.
