Steps to make Golgappa shots:
- Take the wheat flour, rava and salt. Mix everything well and by sprinkling water make a tight dough. If it gets soft, your poori will also turn soft. So tight dough is the key for crispy poori. Cover it with a samp cloth and rest for half an hour.
- Now knead again for 4-5 minutes and keep aside to rest for half an hour. Again take and knead for 4-5 minutes and roll into thin circles. Cut them using a cookie cutter or a glass or katori or any bottle cap. Fry them on low to medium flame for more than you fry for poori. It should be crispy and golden brown.
- For Cucumber Pani we have to grind the cucumber, few Mint leaves and green chilli. Grind and strain the juice to a bowl. Add sugar and lemon extract to balance the flavours.
- Add 1 cup of orange juice. Mix in all the spice powders and salt according to your taste and preference. Keep aside to chill or add ice cubes.
- Now grind the tomatoes and strain to a bowl. Add the remaining half cup orange juice to this. Mix in all the spice powders and salt according to your taste and preference. Add ice cubes or refrigerate. Add a tsp of sugar.
- Boil potatoes and add spice powders, salt and finely chopped coriander leaves. Add some boondi in pani and serve in shot glasses. Fill your poori with potato mixture and sweet chutney and serve on top of the shot glasses with a garnish of mint leaf. Done ! You are ready for the toss😋🥂
In a traditional way, For pani puri fill the plain puri with boiled aloo, chopped onions boiled Bengal gram. And fill with mint water (pani) before serving. Assembling the Golgappa Shots: Pour the Guava Pani into the tiny glasses. Break the Golgappa Poori from one side and fill the pooris with the filling. Keep these pooris over each of the tiny glass and put little Sweet Chutney over each of the pooris and serve.
