  1. Prepare 2 cups wheat flour
  2. Prepare 1/2 cup sugar
  3. Prepare 1/4 shredded coconut
  4. Prepare Pinch cardamom powder
  5. Take 2 ripe bananas
  6. Get as required Ghee

Heat the paniyaram pan and grease it with oil/ghee. Take a spoonful of batter and pour in each cup of pan. Fry the paniyaram evenly on both the sides by rotating with the help of a needle like wooden stick. Remove the paniyaram and proceed with the remaining batter.

Instructions to make Banana paniyaram:
  1. Add sugar to a mixer jar and grind it to a fine powder.
  2. Add bananas in the same jar and grind it to smooth paste.
  3. And now add wheat flour and gradually add water and mix it till you get the consistency of dosa batter.
  4. Add a pinch of salt, cardamom powder and baking powder.
  5. Let the mixture rest for 30 minutes.
  6. Add shredded coconut to the batter.
  7. Heat paniyaram pan and ghee.
  8. Now make hot and sweet banana paniyaram by pouring the mixture in the paniyaram pan.

In western words, it can be called mini banana doughnuts or Indian banana fritters. This banana bonda is commonly called as 'Instant sweet paniyaram' in Tamil. Paniyaram refers to the sweet dish mainly prepared for evening snacks or for the breakfast. These pancakes use indigenous ingredients that form a staple diet in most South Indian Cuisines - Rice/ Rice flour, Coconut, Banana, my most favourite sweetener, Jaggery and the star ingredient, a few pinches of cardamom powder. Smash the ripe banana with a spatula and add all the ingredients mentioned above except oil and water.
