  12. Prepare oil as required
  13. Get 1/2 cup chopped onion, tomato
  14. Make ready 3 Idli
  15. Prepare batter as required (made 8 idlis)
  16. Make ready oil to grease the idli moulds
  17. Take 4 Appam (made 3)
  18. Take batter as required
  19. Get 1 ts oil to grease the chatti
  20. Make ready 5 Kuzhi Paniyaram
  21. Make ready batter as required (made 14 paniyarams)
  22. Get 2 tbsp oil

Uthappam is a type of dosa from South India. Unlike a typical dosa, which is crisp and crepe -like, uttapam is thicker, with toppings. The name is derived from the Tamil words Appam and Utthia or Uttria, meaning Poured-Appam. Because Appam is cooked on a round bottom pan, whereas Utthia-Appam is cooked on a flat skillet.

Steps to make Dosa, Uttapam, Idli, Appam & Kuzhi Paniyaram:
  1. Idli-Dosa Batter - Soak all the ingredients (except salt) overnight. Then grind to a smooth paste by adding some water. Add salt and mix well. Keep it aside in a warm place overnight to ferment.
    1. Dosa - Heat a tawa / griddle and add some oil. Then sprinkle some water and wipe it clean with a tissue paper.
  2. Pour a ladleful of the batter and spread it around in a circle. Drizzle some oil around the edges and cook till one side is done.
  3. Flip it over and cook the other side too. Transfer to a plate. Make similar dosas with the batter and serve with coconut chutney and sambar.
    1. Uthappam - Heat a tawa / griddle and add some oil. Then sprinkle some water and wipe it clean with a tissue paper.
  4. Pour 1-2 ladleful of the batter and spread it around in a circle. Sprinkle the chopped veggies and drizzle some oil around the edges and cook till one side is done.
  5. Flip it over and cook the other side too. Transfer to a plate. Make similar uttapams with the batter and serve with coconut chutney and sambar.
    1. Idli - Spoon the batter in the greased idli moulds and steam for 15 minutes. Demould when it cools down and serve with coconut chutney and sambar.
    1. Appam - Heat an appam chatti and drizzle some oil. Sprinkle some water and wipe clean with a tissue paper.
  6. Pour a ladleful of the batter and quickly swirl it around. Cover and cook on a low flame for 2 minutes or till it is done.
  7. Carefully remove from the pan and transfer to a plate. Make similar appams and serve with coconut chutney and sambar.
    1. Kuzhi Paniyaram - Grease the paniyaram moulds generously. Spoon the batter in the moulds and cook, covered on a low flame till one side is done.
  8. Flip it over and cook the other side too. Transfer to a serving plate and serve with coconut chutney and sambar

Uttapam (aka Uttappa or Oothapam) is yet another healthy breakfast recipe from South Indian cuisine prepared with a common rice and urad dal batter used for preparing Idli and dosa. However, unlike Dosa , Uttapam is little thicker and is topped with different types of veggies like onion, tomato, capsicum, carrot, green chilli, sweet corn etc. Oothappam or Uttapam or Uthappa, literally means 'poured appam' in Tamil. This is a dosa-like dish prepared by cooking ingredients in a batter. Unlike dosa, which is crisp and crepe-like, uttapam is a thick pancake, with toppings cooked right into the batter.
