Ghee / Coconut Oil - For frying. Wash the wheat well and soak it in water for two hours. Add half a cup of jaggery water, boil and strain it.

Instructions to make Broken Wheat Appam/Paniyaram:
  1. Soak the broken wheat for 2 hours in water.Strain the water and blend the mix with 1/4 th -1/2 cup of water.
  2. Melt the jaggery with enough water, strain and add it to the broken wheat mix.
  3. Add crushed cardamoms, 2 tablespoons of rice powder and grated coconut to the mix.
  4. Grease the cast iron Appam pan/ Non-stick pan with enough ghee - Take spoonfuls of the mix and add it to the appam wells.Flip it on both the sides till well done and serve hot with lots of love

Low fat sweet appam is an easy instant appam recipe which can be made for karthigai deepam. Traditionally this appam is deep fried but to cut down oil I used the paniyaram pan, hence it is low fat version. Sweet appam made from wheat flour would be more soft. Be generous in adding ghee otherwise it may not get even browned. Since jaggery is there , they will get brown color soon.
