Chop suey has always been my favorite dish at Chinese restaurants, and after several tries I've managed to come up with this dish that tastes very similar to the chop suey at my favorite Chinese restaurant. There is a lot of chopping, but it's well worth the effort. The prep time depends on how quickly you can chop. Chop Suey which literally means "assorted pieces" is a stir-fry dish popular in Chinese cooking.
Instructions to make Chopsuey:
- Saute garlic and onion in medium heat pan/wok with oil until garlic is golden brown and onions are translucent. Add dried shrimp and cook for about a minute. Set aside.
- Turn heat to high and stir fry chayote for about 3 minutes or until slightly transclucent. Add red and green bell peppers, carrots, corn, and cabbage and cook for another minute.
- Add broccoli and cauliflower and cook for about 2 minutes and turn heat to medium. Add water cooked garlic, onions, and dried shrimp. Add optional fried chopped chicken liver and squid balls. Add cooked quail eggs and snow peas and bring to a boil.
- Add fish sauce, oyster sauce, salt and pepper to taste. Simmer for 2 minutes. Turn off heat and add optional cashew nuts.

It is a mixture of meat (pork, chicken, beef or shrimps) and shredded vegetables such as cabbage, carrots, cauliflower, broccoli and bell peppers bound in a starch-thickened sauce. The good thing about cooking Chop Suey is that you can use as many varieties of vegetables, meat, seafood, and other additions as you like. You can choose whatever you want or omit the ones you do not like.
