  17. Take Salt and sugar
  18. Get 1/3 cup Vegetable Oil
  19. Prepare 200 grams Prawns
  20. Make ready 300 grams Chicken breast
  21. Prepare 1 litre coconut milk
  22. Take 750 ml boiling water
  23. Make ready 1 Chicken Stock Cube
  24. Take Condiments and garnish
  25. Get Bean Sprouts, Tailed and Cleaned
  26. Prepare 2 stalk Spring Onions, Chopped
  27. Take 5-6 Bird Eye Chillies, Thinly Sliced, optional
  28. Get Crispy shallots
  29. Get leaves Mint
  30. Take Lime Wedges
  31. Make ready Shredded Chicken from above

  33. Prepare 250 grams Rice Noodles Blanched according to packaging
  34. Prepare Chilli Oil or sambal oelek for extra spice (optional)

It has been too long since the last time I had Curry Mee. So, I am delighted to make this dish. The basic laksa is sometimes called curry laksa. The most popular curry laksas include a paste made up of shallots, garlic, turmeric, lemongrass, candlenut or cashew, and galangal.

Steps to make Curry Laksa:
  1. Place the chicken breast in medium pot with 2 cloves of garlic, 1 small sliced onion and 250ml water. Bring to boil then simmer for 20 minutes. Strain the stock and keep for the curry. Once cooled, shred the chicken. Cover and set aside. In another pot, place prawns with 100ml of water. Once boiled, simmer for 4 minutes or till prawns are cooked through. Strain the stock for the curry. Cover prawns and set aside.
  2. Heat a large non-stick sauce pan with 1/3 cup vegetable oil. Once hot, add blended spices. Keep on medium to low heat. Let the spice cook, stirring occasionally for 10 to 15 minutes. Add stock cube, coriander turmeric and chilli powder and both the stock liquid.
  3. Add coconut milk and tofu balls, stir to mix. Let simmer for another 20 mins. Prepare ingredients for the condiments and place in individual bowls. Blanch the noodles and transfer them into another covered bowl.
  4. Add salt and sugar for seasoning. If you prefer less thick laksa broth, add the boiling water. Stir and keep warm.. - To assemble, place noodles in individual bowl. Pick and mix your favourite condiments, pour laksa gravy and enjoy

Coconut cream or milk, stock or broth, lime juice, and bean sprouts balance the bold paste along with chicken, shrimp, or tofu, or a combination. Heat the oil in a wok or saucepan over medium-high heat. Add the curry paste and cook, stirring, for half a minute or until fragrant. Then add the chicken and stir-fry for a minute or so.
