The basic pulao is a one pot dish in which the spices are tempered first and then the veggies & rice are cooked together. Prawns pulao is a delicate, flavorful prawn and rice dish fit for a feast.

The ingredients needed to make Prawn pulao:
- Take 3 glasses rice
- Prepare 3/4 kg Prawns (peeled, cleaned, deveined)
- Take 4 1/2 glasses water
- Take 1 tsp ghee
- Get 1 tsp oil
- Get as required Cashews
- Get for Spices
- Get 2-3 bay leaves
- Prepare 1 tbsp Black cumin seeds
- Get 2-4 cardamoms
- Take 1 inch cinnamon bark
- Make ready 3-4 cloves
- Take 1 mace
- Prepare 1 star anise
- Prepare 4-5 pepper corns
- Prepare 1 1/2 tbsp chilli powder
- Prepare 1/2 tbsp turmeric powder
- Make ready 1 1/3 tbsp coriander powder
- Prepare 1 tbsp cumin powder
- Get 1/2 tbsp garam masala (optional)
- Take 1/2 tbsp dried Fenugreek/ kasuri methi (optional)
- Take As needed - rock salt
- Prepare For Vegetables-
- Make ready 2 onions
- Make ready 2-3 green chillies
- Get 1 inch ginger
- Make ready 5-6 garlic cloves
- Take As needed - coriander leaves
- Get As needed - mint leaves
Heat oil in a frying pan and fry the prawns lightly on both sides on a medium heat till golden. This is a simple pulao made from fresh prawns. But let me tell you the taste of this recipe cannot be described in words. It is a simpler version of prawns pulao.
Instructions to make Prawn pulao:
- Soak rice in water for half an hour
- Cut the vegetables. Make the ginger-garlic paste.
- Heat oil and ghee in a pan.
- Add spices. Cook for half a minute. Add onions and green chillies. Cook until the onions become translucent.
- Add ginger-garlic paste and pepper.
- Wait until the onions brown /caramelise. Add salt,turmeric, chilli powder. Mix thoroughly. Let it cook for 2 minutes.
- Add mint. Cook for a minute. Add coriander and cashew nuts. Cook until the cashews brown a little.
- Add the prawns. Mix carefully without breaking them. Cook for 1 minute (until they start to become slightly C-shaped)
- Add cumin powder, coriander powder, garam masala, dried Fenugreek. Mix well.
- Add water(1:1.5 ::rice:water). Put a lid on it until it starts to boil. Taste the water to check for salt and spice.
- Drain the rice thoroughly.
- Once the water boils, add the rice. Mix carefully.
- Cook it in a pressure cooker for 15 minutes on low flame.
- Mix and serve. Garnish with lemon and onions.
Light spices and cashews gives this pulao an amazing flavor and taste. T he inspiration of this Prawn Pulao came from Mishmash's CheMmeen Biryani. I call it "CheenMeen" which sounds so lyrical that it is hard to get it out of my head. It is like raindrops but better. However I will stick to Prawn Pulao or better Chingri Maacher Polao because the recipe is quiet different from her Biryani and you would better check out her page for the Biryani.
