- Take 1 sprig Curry leaves
- Take 1/2 Tsps Garam Masala powder
- Make ready 1 Tsp Coconut Oil
Instructions to make Kerala Chicken Roast:
- Grind everything under 'To Grind' into a coarse paste. Use half of this paste to marinate the chicken. Keep it for 30-60 mins.
- Shallow fry the chicken pieces in 3 Tbsp Oil in a non stick pan until both sides are light brown. Transfer to a pressure cooker.
- To the same pan add rest of the oil and saute Onion and curry leaves until onion turns light brown
- Lower the heat and add rest of the paste from step 1. Saute until raw smell goes away and it becomes brownish black in color.
- Add the above mixture to the chicken waiting in pressure cooker. Add 2 cups of water. Wait for 3 whistles. Let it cool down.
- Transfer the contents to the pan and let the gravy thicken.
- Once its almost dry, add the coconut milk.
- Switch off the flame. Sprinkle the items under 'To Garnish'. Close the lid and rest it for 30 mins.
