INSTRUCTIONS FOR THE BEST VEGAN OMELET This recipe is all about flavour and texture. To start, heat oil over medium-high heat, and cook chopped shallot until it becomes translucent and fragrant. Once cooked, put the onion in a blender with medium tofu, nutritional yeast, olive or avocado oil, garlic powder, turmeric. Omelets are a great one-dish meal because, with their folded shape, many additional ingredients can hide inside, both for flavor and texture.

Steps to make Vegetarian Omlette:
  1. Heat 9" skillet on medium-low until evenly heated and add butter to coat pan.
  2. Whisk eggs in a small bowl. Add basil, salt and pepper and thoroughly whisk again. (this gives an awesome, perfectly even mixture of seasoning through the whole omelette…yum!)
  3. Pour egg mixture into pre-heated skillet.
  4. Allow egg to cook for about 2-3 minutes, then flip over to continue cooking.
  5. Add cheese and additional toppings to the flipped egg.
  6. When cheese melts, gently fold the egg over in half and slide onto your waiting plate.
  7. Eat immediately, or you can grab your phone/camera and take a bunch of awesome pictures like I'm known to do with every meal now….

Our easy vegetarian omelet features colorful peppers, but lends itself to a multitude of variations: it is up to you to choose additional vegetables to include in the omelet, or perhaps cheese. Prepare your omelette by adding soy milk to a jug and then adding in the nutritional yeast, turmeric, paprika, garlic powder, onion powder, black salt and dijon mustard and then whisking into a sauce.
