Remove the Daikon and rinse the scum off. Wash the squid and remove the guts, the legs, and the bone. Prepare the squid and wash well. Add the sauce ingredients to the dashi soup stock and heat.

Instructions to make Boiled Daikon with Squid:
  1. Remove the quill and innards from the squid, rinse, and slice into rings (about 1 cm thick). Chop tentacles into bite sized pieces.
  2. Peel the skin from daikon and slice into 2 cm thick rounds, cut into half moons, cover with water, then boil over high heat.
  3. Once it comes to a boil, add the squid from Step 1. Remove any scum that might rise to the top.
  4. Add sake, sugar, and mirin to stew from Step 3, and reduce to medium heat. Cover with a drop lid (otoshibuta).
  5. Once the daikon is tender, add soy sauce, cover with a drop lid, and simmer over low heat.
  6. It's done when the soup has reduced by 1/2 to 1/3 the original amount.

Squid makes a deep flavored and fragrant broth. And the daikon radish absorb it very well. When it gets cold, the broth soaks into the daikon radish. So heat it when you eat. select any kind of fish u desired. I added the precooked daikon and squid rings and tentacles to the cooking liquid.
