Namul of Daikon Greens A Namul is a particular type of Korean Banchan, or Side Dish, which features seasoned vegetables (sometimes cooked, and sometimes not). You can use almost any greens here instead of Daikon Greens, but the recipe handles the coarser, more fibrous types very well. Namul is the general term that refers to a seasoned vegetable side dish. Made with mu (or moo), Korean radish, this dish is called mu namul.
Instructions to make Easy Daikon Namul:
- Peel the daikon radish, and julienne it with a vegetable slicer.
- Heat a frying pan, and cook the daikon radish in the sesame oil. Once the daikon radish has wilted, season with the garlic, beef stock, pepper, salt and a pinch of sugar.
- Cook the daikon radish to your liking. Namul with a crispy-crunchy texture is delicious, but so is soft namul.

- Once it's finished frying, turn off the heat, and sprinkle over the toasted sesame seeds to finish. This is delicious served in bibimbap!

If you remember from my kkakdugi post, Korean radish is a variety of white radish (aka daikon) and has firm crisp flesh and a slightly sweet and peppery taste. Directions Rinse the dried daikon radish while squeezing out the rinsing water several times, place in water until softened, squeeze out excess moisture and cut into easy-to-eat lengths. Chop off the hard roots of the salsola, add some salt (not included in ingredients), quickly boil and then cut into thirds. They still love bibimbap with both this namul and sweet and sour namul. The trick is cooking the daikon radish.
