- Get 3 tbsp Vegetable Oil
- Take 1 cup Tomato Chopped
- Take 1 inch Ginger Chopped

- Prepare 2 tsp Coriander Powder Coarsely Ground

- Get 2 tsp Kashmiri Red Chilli Powder
- Make ready 1/2 tsp Garam Masala Powder
- Make ready 400 g Potato Boiled and peeled
- Make ready To taste Salt
- Take 1 tsp Amchoor Powder
- Take 2 tbsp Fresh Coriander Chopped
Gujarati's are very famous for travelling long distances with a lot of cooked food along with boxes of dry snacks to munch along. Usually aloo tamatar sabzi is made to go with pooris and is often made for breakfast. But in that dish we use onions and garlic. Since this dish was made for Navratri fasting, I have spiced with cumin, red chilli powder and black pepper powder.
Steps to make Aloo sabji:
- Add tomato, ginger and green chilli in a bowl and blend to make a smooth puree.
- Heat oil in a pan. Once the oil is hot, add hing and jeera and let them crackle for a few seconds
- Add coriander powder, fennel powder, turmeric powder, kashmiri red chilli powder and garam masala powder and cook until oil separates from the sides.
- Break the potatoes using your fingers roughly and add them in the pan. Add water, amchoor powder and salt to taste.
- Cook for 3-4 minutes. Add more water if required. The gravy is supposed to be thin
- Garnish with fresh coriander. Serve hot with poori or Kachori.
Aloo Sabzi In a big pan on medium heat, add ghee. Once the ghee is heated add Cumin, dry Red Chilli, Hing, Ginger and Garlic. Cook till the raw smell of ginger disappears. Aloo Tamatar Ki Sabzi is a simple, comforting and easy to make dish which is regularly cooked in North Indian households. It is made by cooking potatoes in a simple tomato curry.
