This Ridge Gourd curry (Turai ki subzi) uses very basic ingredients and spices. Start the pressure cooker or instant pot in sauté mode. Add oil, cumin, green chili, ginger and garlic. I used finely diced ginger and garlic.
Steps to make Ridge gourd (turai ki sabji):
- Peel the ridge gourd, wash and cut into small pieces.Chop the onion.
- Heat oil in a kadahi.Add celery seeds now add hing and chopped onion.
- When onion turn red add turmeric and red chilli powder.Now add ridge gourd.
- Mix it well on low flame.Now add salt according to taste.Cover the kadhai after 10 minute open it and check.
- If ridge gourd became soft then add garam masala and off the flame. If not then cover again for 5 minute.
- If it cooked well then switch the flame off add some ghee.Serve with chapati.
How To Make Turai Recipe (Ridge Gourd Recipe) Step By Step With Photos Firstly, wash and peel the skin of the Turai and chop it. Heat a pan and add jeera (cumin seeds), chopped onions, and ½ tbsp of turmeric powder in the pan. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura. Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts.
