As it is a seasonal vegetable so very easily available and is very reasonably priced. It belong to the gourd family and have a mild sweet taste. Combine the beaten curds, gram flour, ½ cup of water and curry leaves and mix well so that no lumps remain. Heat the oil in a pan, add the cumin seeds, mustard seeds, fennel seeds, asafoetida, bay leaf, clove, cinnamon and cardamom.
Steps to make Turai gatta subji:
- Heat oil in a pan tempering mustard seeds asafoetida. Now peel and cut ridge gourd in 1" size wash and saute add soda salt ginger chilli paste saute and add water cook on mid flame.
- Now chopped and wash fresh fenugreek drain water. Add besan jowar flour pinch soda oil salt cumin coriander powder turmeric powder garam masala asafoetida ginger chilli paste. Mix well add water and make thick consistency batter.
