Zarda is a traditional sweet rice dessert originated from the Mughals. The name Zarda is derived from the Persian and Urdu term 'Zard' meaning yellow. The dish gets its name as it is prepared using yellow color. (Source:wiki) Zarda also known as meethe chawal is usually prepared during special occasions like weddings, festivals and celebrations. Zarda is best served warm and I love it with a very strong cup of unsweetened tea after dinner.

Steps to make Zarda:
  1. Soak rice for 30 Minutes then Boiled the rice with yellow food colour (boiled rice like we boiled for biryani). Then strain water from rice and set aside.
  2. In a wok add Desi ghee and green cardemoms fry for 30 seconds then add sugar, fresh milk and Balai (from fresh milk).
  3. Cook the sugar Mixture till sugar desolved and getting thick.
  4. Time to add boiled rice in the sugar Mixture and mixed it with light hand.
  5. After well mixing add blanched Almonds, murabba Ashrafiya and dry coconut flakes on top and dum the rice for 10 minutes at low flame.
  6. After dum, zarda is ready. Mix and serve. Enjoy

The recipe I've seen the women in my family use is very long and complicated, some involving boiling the rice separately and making a ' chashni ', a sugar syrup infused with the cardamom and food colouring to pour over the plain rice seperately.
