Khaman is made with besan or chickpea flour and is yellow in colour. In contrast, the other Dhokla varieties are white and are prepared using rice flour mixed with chickpea flour. While Khaman Dhokla is sweet and zesty at the same time, the other dhokla is generally just tangy in taste.

- Get 2 cups Gram flour (baisan)
- Take 1 tsp Turmeric powder (haldi)

- Take 1/2 tsp Sugar
- Get 1/4 tsp Salt
- Get 1 tbsp Lemon juice
- Take Bhagar ingredients
- Make ready 2 tbsp Oil
- Take 2 tbsp Mustard seed (rai dana)
- Make ready 2 tbsp Cumin seeds (Zeera)
- Get 15-20 Curry leaves
- Take Green chillies 6-8 (split in between or roughly chopped)
My mother-in-law adds a pinch of sugar to the batter to match every Guajarati's love for a hint of sweetness in their food. Khaman is a variation of the Rava Dhokla recipe I shared before. The primary ingredients in Khaman is gram flour, while for Rava Dhokla the main ingredient is semolina. Khaman is also called as Besan Dhokla or Yellow Dhokla due to it's yellow color from gram flour.
Instructions to make Dhokla / Khaman Dhokla:
- In a bowl mix all ingredients except baking soda and rest for 15-30 minutes - Meanwhile ready ur steamer
1. Grease ur cake pan & transfer this mixture in it - Add baking soda and top with few drops of lemon juice, mix this foamy texture in all ur batter (do it quickly) & place it on ready (preheated)steamer - Check it after 10-15 minutes, steam it until toothpick comes out clean
1. Meanwhile in a saucepan add all soaking ingredients cook until sugar dissolved, strain & set aside
1. When dhokla is ready add this mixture on top lil by lil with spoon (don’t need too soggy) - When cool Cut in ur desired shape spread it on ur serving dish
1. In a pan heat oil add all bhagar ingredients,when it’s sizzling add on top of ur dhokla - Decorate with chilli flakes, desiccated coconut & fresh coriander - Serve with raita, coconut chutney, lehsan chutney - Tadda - Enjoy
Traditionally Khaman is steamed in a stovetop pressure cooker without the whistle. Dhokla or Khaman Dhokla or Besan Dhokla is one of the popular Gujarati snack or tiffin or appetizer - yet another simple recipe that can be prepared in a jiffy. As the name suggest, it is prepared with besan or chick pea flour. Technically dhokla and khaman are different. Dhokla is made from a fermented batter of ground rice and chana dal.
