Paniyaram is a Tamil name, also known as Kuzhi Paniyaram also called Gunta ponganalu in Telugu, and Paddu in Kannada. It is also known by various other names in South India, including appe, guliappa, gulittu, gundponglu. The design of this appam maker is such that it requires to be cooked in very less oil, which makes it ideal for calorie conscious people. Instead of ghee you can use coconut oil too.
Steps to make Paniyaram /appe:
- Chop all the ingredients finely
- In a fry pan add gingelly oil and put all items under tempering.
- Saute onion chillies and ginger until onions are translucent. Add little salt for onion while sauteing
- Add sauted onion in dosa batter and add curry leaves and coriander leaves
- Mix nicely
- Grease appe or Paniyaram pan and pour the batter.
- Cook till golden or both sides
- Serve hot with chutney.
Keep the flame to low or medium and cook the appams. A special pan is used to make them and it is called as Paniyaram chatti Or appe pan. this special cookware has moulds in it and is similar to the æbleskiver pan used in european cooking. in the Indian market one gets both non-stick as well metal appe pans.
